1 cup rice (wash and soak for 5 mins)
1/2 cup frozen mixed vegetables (carrot, peas and beans)
1 potato cut into small cubes
1 onion sliced
1 teaspoon ginger & garlic paste
1 table spoon yoghurt
1/2 teaspoon red chilli powder
1/2 teaspoon garam masala
1 teaspoon biryani masala , Aachi biryani masala so far the best in taste ( not sponsored)
1/2 teaspoon lemon juice
4 black pepper
1/2 inch cinnamon stick
2 bay leaves dried
3 star anise
1 black cardamon
1/2 teaspoon cumin seeds
Mint leaves few only to garnish
ghee or oil
Take a pan, add oil. Heat the oil and add cardamons, cloves, black pepper, cinnamon stick, bay leaves, star anise and cumin seeds. Saute for few seconds. Now add onions and saute it until transparent. Add ginger garlic paste and mix well. Now add all vegetables and above mentioned masalas and stir well. Add the yoghurt and mix again. Add rice,salt and water (For 1 cup rice we usually take 2 cups water, but we added yoghurt so take 1 ½ water), lemon juice and let it cook until water dries up.
Should take 10 mins. Add mint leaves over the biryani and cover the lid for 5mins on slow.
Biryani is a one pot meal. Super healthy with mixed vegetables. You can also add paneer if you like.

- For raita:
Take 1 cup yoghurt, 1 small onion, few mint leaves, few coriander leaves and green chillies and blend it in a blender. Now add salt. Its ready to eat.
